Moist Chocolate Muffins for the Boys

 My boys love sweet baked goodies. But when they saw the blueberries in the muffins I baked recently, they quickly put it down. I made this never fail, moist chocolate muffins this week to make-up and because I love it too.

Ingredients:

2 cups all purpose flour
1 cup white sugar
3/4 cup chocolate chips
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp vanilla extract
1 egg
1 cup plain yogurt
1/2 cup milk
1/2 cup vegetable oil
1/4 cup chocolate chips
Method:
1. Preheat oven to 190 degrees C. Grease 12 muffin cups or line with paper muffin liners.
2. Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder and baking soda in a large bowl.

3. Whisk egg, yogurt, milk and vegetable oil in another bowl until smooth.

 4. Pour (3) into chocolate mixture and stir until batter is just blended.

 5. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.

 6. Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.
