Cafe-Style Banana Bread

You will thank me for this classic.

I usually bake this for breakfast. I recently made it for Tatay to bring and share during his parish retreat. I received more than sufficient compliments.

My boys’ favorite too.

From the book, Flavours of Urban Melbourne. I added dark choc chips to make it yummier.

Ingredients:

3 cups self raising flour
1 1/2 cups raw sugar
1 tsp baking soda
1 tsp nutmeg
1/2 cup milk
4 whole eggs
250 g unsalted butter
6 ripe bananas
150 g dark choc chips

Method:
In a large mixing bowl, mix all dry ingredients and dark choc chips. Mix milk and eggs together.

Melt butter. Mash bananas roughly. Add melted butter, egg and milk mix to dry ingredients, then mashed bananas.

You will need a large 30 cm loaf tin. Spray and add baking paper to the base for easy removal. Cook for 160 degrees C for 1 hour.
