I reckon that the best recipes are the simplest. Like Maureen’s sheets. She brought it over for a friend’s farewell coffee. I had one square then another. I had to stop myself from getting more because there were a number of us and everyone was raving about it.
Here’s the recipe as passed down by Maureen.
250 g dark or milk chocolate
2 cups dessicated coconut
1 cup sugar
Line a rectangular sheet with baking paper.
Melt the chocolate then spread it all over the sheet. Let it cool.
Meanwhile, mix your eggs, coconut and sugar together.
Pour your mixture on top of the cooled chocolate.
Bake for about 25 minutes at 160 Celcius or until the top of the sheet is firm and golden at the sides.
You may sprinkle icing sugar on top.
Maureen added cherries in her sheets which I omitted because my babyccinos don’t like it.
